The Applications Desktop Integrator User's Guide can be downloaded, with all of the other Applications Documentation from http://www.oracle.com/technology/documentation/applications.html

I have just reread your original post and my reply. There is information regarding EDI in the Payables User Guide, the Receivables User Guide and the Oracle e–Commerce Gateway User Guide.
